Yes, you read correctly! We have International Pitmaster & World Champion Sterling Smith from Loot n Booty BBQ heading to New Zealand! And what better way to spread the barbecue love than a competition barbecue Masterclass! Sterling is going to cover, (for the first time ever) his multi-award-winning competition Chicken Wings & Pork Ribs, while I (Steve from Cook Cartel) take on competition Pork & Brisket! National Champion Brisket 2023 & National Champion Pork 2024.
This class will go through everything from setting up your pits, to trimming, seasoning, cooking methods, finishing and boxing! This is a ONE TIME gig with these 2 guys running a tell-all competition class! Full Q&A with everything in between. A little bit more about Sterling:
Sterling Smith, 2022 World Barbecue Champion, US Navy Veteran, barbecue teacher, cookbook author, and owner/Pitmaster of Loot N’ Booty BBQ, has been competing on the professional barbeque circuit since 2009. In that time, Sterling and his family have travelled nationally and internationally to compete in major competitions Including the Jack Daniel’s World BBQ Invitational, where they won the title of World Pork Champion, the American Royal World Series of BBQ, where they won Reserve Grand Champion in 2014 and 2022 out of more than 500 professional BBQ teams and won the title of Chicken World Champion and The Kingsford Australian World BBQ Invitational where they won the title of Brisket World Champion. Sterling has won over 58 Grand and Reserve Grand Championship Awards, more than 800 top ten awards and is the two-time Australian Invitational Lamb Champion. A little bit more about Steve from Cook Cartel:
The Cook Cartel need little introduction when it comes to competition barbecue cooking in New Zealand. Gone from strength to strength since starting out in 2020 with a total of 14 x Reserve Grand Champions, and 7 x Grand Championships. 20 x Perfect scores across all proteins with 5 in Brisket and 5 in Pork. Cook Cartel won the overall 2024 National Championship as well as the Pork Championship, and finished 1st overall in Brisket in 2023. Cook Cartel won Meatstock Melbourne with a 1st Place Brisket, as well as 1st Place in Brisket at the Australian Invitational in Port Macquarie 2023. Steve & Mike competed on TVNZ's 'Cooks on Fire' and finished runner up, showcasing their love for food and creating amazing dishes.
